Saltpetre is the white, feathery, crystalline salt that effloresces from nitrogen rich soil, old plaster, and manure heaps, gathered for centuries as the essential ingredient of gunpowder and, in the chemical workshop, as the single most important source of strong nitric spirits. Its name, salt of stone, reflects how it was harvested, scraped as a crust from cellar walls, stables and dovecotes rather than mined or smelted like a metal ore. Distilled with vitriol or alum it yielded aqua fortis, and mixed with sulfur and charcoal it yielded gunpowder, making it one of the most consequential substances in both chemical and military history. It is, in modern terms, simply potassium nitrate, its explosive and oxidizing power both consequences of the nitrate ion's readiness to give up oxygen.

Making It and Using It
Saltpetre forms naturally wherever nitrogen rich organic matter, animal waste especially, decays in contact with alkaline soil or old mortar, a slow bacterial process early observers understood only as a mysterious efflorescence that appeared on cellar walls, stable floors and manure heaps in temperate climates. Saltpetre men, licensed in several European states specifically for the purpose, scraped these crusts, leached them with water, and boiled the liquor down until crystals of niter separated out, a laborious cottage industry that supplied gunpowder makers for centuries before industrial nitrate sources made it obsolete. In the chemical workshop, saltpetre distilled together with oil of vitriol or with alum and clay yielded aqua fortis, the strong acid that could dissolve silver but not gold, making saltpetre indirectly responsible for one of the standard early modern tests used to distinguish the two metals.
Mixed with sulfur and charcoal in the classic proportions refined across the medieval and early modern periods, saltpetre made gunpowder, whose military importance drove state interest in securing a reliable domestic saltpetre supply for centuries; England, France and other powers all regulated and taxed saltpetre production heavily. Purified saltpetre, refined by repeated dissolution and recrystallization, was called prunella salt or refined niter and was considered a distinct, higher grade product from the crude scraped crust.
What It Actually Is
Saltpetre is identified without dispute as potassium nitrate, KNO3, one of the more chemically stable and well behaved of the traditional salts, and one whose modern identity was worked out relatively early once eighteenth century chemists began systematically distinguishing the alkali metals and the nitrate radical. Its oxidizing behavior, releasing oxygen readily when heated with a fuel, is exactly what makes it central to both gunpowder and the strong acid distillations that depend on its nitrogen content; historians of chemistry including John Emsley treat saltpetre as a clean case where the traditional name, the traditional preparation, and the modern formula line up with no real ambiguity left to resolve.
The one historical wrinkle worth noting is that early modern saltpetre, gathered from natural efflorescence rather than manufactured from pure reagents, was often contaminated with related salts, calcium nitrate and sodium nitrate especially, which refiners removed by exploiting potassium nitrate's more favorable crystallization behavior, a purification chemistry the refiners understood empirically long before anyone could explain it in terms of solubility curves. That empirical skill, refining a militarily and economically vital salt to reliable purity with no atomic theory to guide the work, is a useful reminder of how much practical chemistry pre-modern refiners achieved through careful, repeated observation alone.
